Right now Extra Virgin Olive Oil. However, I am looking into Coconut Oil. I threw out my Canola and Corn oils. Too much Omega-6s, which promote obesity and other health problems.

I totally agree with your last line there. I was at a cooking class with my friends last night, and when mentioned I worked in the International District, the instructor asked what my favorite Chinese restaurant is, I answered, "my kitchen." She agreed, noting that Chinese restaurants use too much (unhealthy) oil and sauce. With my own stir fry, I can really emphasize the meat and vegetables and use moderate amounts of healthy oil (I'm really loving the coconut oil now).
